Todestages von Jacob Grimm im Jahr 2013 komponiert wurde, wechseln Gesang und gesprochener Text einander fortlaufend ab und auch das Orchester spielt eine wichtige Rolle, sodass das Gesamtwerk inhaltlich und klanglich abwechslungsreich ist. Es war einmal ... kann auch konzertant aufgeführt werden und bietet außerdem Möglichkeiten für eine (teilweise) szenische Umsetzung. Es war einmal ... (Il était une fois) s'inspire de quatre contes de Grimm: La Clé d'or, Le Petit Chaperon rouge, La Belle au bois dormant et Le nain Tracassin. Chants et narration alternent sans interruption, tandis que l'orchestre joue un rôle capital dans cette pièce au conenu et aux sonorités très variés: sons harmonieux ou terrifiants, ambiance rêveuse, majestueuse ou grotesque, climat pittoresque ou triomphant... Cette compostion, qui peut être interprétée instumentalement, se prête également à une mise en scène partielle. Les textes sont en allemand et en flamand.
